Black Eyed Peas w/garlic Shrimp



This is “a” traditional dish for bringing you good luck in the New Year. I personally don’t believe in luck. I believe in hope and miracles. But, the black eyed peas are good. I also fudge this dish and use canned peas.

½ green bell pepper chopped
½ onion chopped
1 celery stalk chopped
1 carrot chopped
1 garlic chopped
4 scallions chopped
1 TBSP olive oil

½ cup dry white wine
1 cup chicken stock
Salt and pepper

2 cans black eyed peas with bacon (or you can add two strips of bacon)

1 bay leaf
1/8 tsp. thyme

In a large 4 quart pot heat the olive oil and sauté the mirepoix eight minutes. Add the white wine and cook 3 minutes. Add the canned peas, chicken stock, salt and pepper and the herbs. Simmer covered for 30 minutes.

Garlic Shrimp
1 pound shrimp, meat only
2 large cloves of garlic (chopped)
1 TBSP olive oil

In a non-stick pan, heat the oil, add the garlic, then the shrimp and cook on medium heat for about 5 minutes until the shrimp turns pink and be careful not to burn the garlic. Dump the shrimp mixture into the pot and simmer on low 15-20 minutes. Serve.

Adding more or less chicken stock makes it more or less soupy.
